Our Kona coffee is mountain grown without pesticides on our own estate at approximately 1250 feet "mauka" (up the mountain) on the slopes of the Mauna Loa volcano. Our Kona coffee is hand-picked only at its peak ripeness, hand-washed, fermented, sun-dried, hand-raked, milled, hand-graded and roasted right here on our plantation We have two acres of shade grown coffee trees; these 1200 trees are shaded not only by the cloudy afternoons but by dozens of very large and mature macadamia nut trees interspersed throughout the coffee orchard. Both shade-grown and "mauka-grown" coffee are superior to coffee grown in full sun at lower elevations because they mature more slowly. Slower maturation results in crops with a higher percentage of the prized larger grades of Extra-Fancy and Fancy along with a denser coffee bean. We do not have to meet the 35-50 pound minimum per roast required when growers take their coffee to another farm to be roasted (as most small farms do). We don't have roasted coffee sitting around "waiting to be sold". Your order is freshly roasted and shipped out daily. The quality and taste of Kona coffee is really determined by how well it is grown and processed. There are certain things that must and must not be done during both growing and processing to ensure the best possible end result. We adhere strictly to these recognized "best practices" in both our growing and processing stages.
